Mini Mexican Pizzas

There is becoming a recurring pizza theme it seems on my blog.  LOL.  What can I say I love pizza!  The blog I got this recipe off of was Dashing Dish.  Supposedly these Mini Mexican Pizzas were supposed to taste like Taco Bells mexican pizza, but it did not!  But they were still really delicious.  Shane ate 4, which is always a good thing.  He said they taste like mini tacos.  They were super easy to make!!  And I'm sure if you have little ones this would be great for them too!  These are 2 Points+.

Hope everyone had a great weekend!  We enjoyed meeting Troy and Jacob from Swamp People!  They were such nice guys!!  Kellie made super cute "Choot Em" shirts and got alligator hats from the Dollar Tree, which we had Troy and Jacob sign.

Pizza, Pizza

The last couple of days I have CRAVED pizza!  I'm not sure why, I just have.  Since I've been doing Weight Watchers, and lost 25 lbs, I must add, I am constantly looking for lower point options of my favorite foods.  Pizza is my ALL TIME FAVORITE food!!  Pinterest has lots of great *pins* of low fat recipes so I found this little gem the other day:

California Tortilla Pizzas


I used corn tortillas, since I can eat two of those, instead of just one flour tortilla.  The original recipe doesn't have sauce on it, so I used some of the spaghetti sauce I had on hand (I can't have pizza without sauce)!  Also since Shane has to have meat, I added turkey pepperoni to his!! Add a salad as a side, and you've got a great meal.


I added up my version to be 7 Points+.  That was for two corn tortilla pizzas plus toppings.

Easy Tiramisu

I have been craving tiramisu for sometime now, so to celebrate my 25 lb weight loss I decided to make some...well a slim-down version of the wonderful tasting original!  I used this recipe to satisfy my cravings...

I used lite whipped topping and fat free milk in my recipe.  I also soaked my ladyfingers for a few minutes in coffee before assembling all my ingredients!  I calculated mine to be 7 Points+.  I thought it was delicious!!

Black Bean and Zucchini Enchilada

I figured it would be easier to post a recipe on my blog and then post it to Facebook instead of just putting it on Facebook!  It is much easier to type it on here.

The skinnytaste version is 7 Points+ on Weight Watchers, mine is 9 Points+

Here is my adaptation:


Ingredients

  • cooking spray
  • 1 tsp olive oil
  • 2 cloves garlic, crushed
  • 1 large zucchini
  • salt and pepper
  • 1 1/2 cups grated cheddar cheese
  • 7 small corn tortillas
  • 1 can black beans
Enchilada Sauce

  • 1 garlic clove, minced
  • 1 cup tomato sauce
  • 1/4 tsp chili powder
  • 1/4 ground cumin
  • 1/2 cup reduced sodium chicken broth (could also use vegetable broth, I used what I had on hand)
  • salt and pepper to taste
  • 1 tbsp chopped jalapenos
For the enchilada sauce:  in a medium saucepan, spray oil and saute garlic.  Add chili powder, cumin, broth, tomato sauce, sauce and pepper, jalapenos.  Bring to a boil.  Reduce heat to low and simmer for 5-10 minutes.  Set aside until ready to use.

Spray a baking dish with nonstick spray.  Preheat oven to 400 degrees.

in a medium nonstick skillet, saute garlic in olive oil over medium heat for about 3 minutes; add zucchini, salt and pepper to taste and cook about 4-5 minutes.

Remove from heat and add 1/2 cup cheese and black beans; mix well.

I used an 8X8 casserole dish.  Divide zucchini mixture between each tortilla, roll and place seam side down in baking dish.

Top with enchilada sauce and remaining cheese and bake until hot and the cheese is melted.

Hello blogging world!  Long time no see!!  I'm sad it's been so long since I've posted, but I've been a very busy girl! 

With February came one of the best trips of my life...Viva Las Vegas!!  If you haven never gone here, it is an awesome and reasonably priced trip!  Mama, my Aunt Cathy, and I had a most excellent time.  We stayed at the New York, New York.  It was a very nice, clean hotel & casino. 

The food, casinos, and people were great!  We were there for 5 days and I could have easily stayed another 5!  Also stuff was extremely well priced too!!  I don't think I could pick a favorite casino/hotel...but I was very disappointed in the Paris Hotel, but I guess once you've seen the real thing you don't enjoy the imitation as much!

We also took a day trip to the Grand Canyon and Hoover Dam.  The Grand Canyon was probably the most magnificent thing I've ever seen!!  It was God's work of art for sure!  I would love to go back and go rafting down the Colorado River and see it from an even different prospective.

We not me so much took a walk on the Skywalk Bridge.  It was scary for me!  One experience which I do not care to repeat!  This bridge suspends you 4000 ft in the air and it has a glass bottom and you have to wear special slippers over your feet to even walk on it!  I made it about 10 ft out.  I just couldn't look down.  Mama and Cathy made it all the way around!



With March came extreme sadness for our family.  We found out the 7th that my sweet grandmother had liver and pancreatic cancer.  She had a rough couple of weeks at home and then went to be with the Lord on March 26th.  She will forever be in our hearts and extremely missed, but we know that she is happy being back with my grandfather and all of those who went before her.  She had a great attitude about her illness and said, "I'm a winner either way, if I stay or if I go!"


Here we are enjoying our last Christmas with her. 

Well I'm gonna try real hard to not take so long in between posts!!  Hope everyone enjoys their Easter weekend!!  I'll be enjoying church, family, and Titanic in 3D!!

Hunting Seasons Over...Back to Reality

Well hubs is bummed since hunting season is officially over!  He is counting down the days till turkey season starts (March) and so am I...lol!  He had a very busy season!!  I am glad that he will be home more weekends now!!

Well I've gone back to working a "normal" schedule!!  It's taken some getting used to since I very much enjoyed sleeping late, but alas, it has allowed me to get a lot more done at home in the evenings as far as cleaning and schoolwork!!  I'm almost done with school!! Praise the Lord.  I'm enjoying my new position at work as the Insurance Billing Clerk, it is a lot of work, but I've enjoyed it more than my previous position. 

This weekend my mom, Aunt Cathy, Grandma and I went to see Beauty and the Beast 3D.  It was great, just thought it'd be a little more 3D.  It wasn't as "WOW" as seeing A Christmas Carol in 3D.  I had to go see Beauty on the big screen once again however because it is my absolute most favorite Disney movie EVER!  I remember going to see it at Toccoa Triple Cinema with my mom and a friend when I was like 6 I think and it's been my favorite ever since!!

American Idol starts this week woohoo!!  Wednesday and Thursday, so glad.  No singing show is even close to being as good as Idol, not The Voice or X Factor, even if X Factor has the wonderful Simon Cowell.  I read today that this may be Ryan Seacrest's last season, so sad, but they don't want to continue to pay his $15 million dollar salary.  I think he's worth every penny.

Well at least it didn't take me as long to write a post this time!!  lol.  Can't wait for my girls night this Friday, it has been way too long!!

2011 Where did you go?

I feel like 2011 was a blink and it was gone year! It had its ups and downs, but I'm definitely glad the year is OVER! I think it went by so fast because I was so busy! I intend to slow things down this year and just breathe...sigh! I'll be so relieve when school is over! Hopefully in like 2 months! A new year brought a new work schedule...working 9-5...what a way to make a living, as Dolly says! It will take some adjustment since I am not a morning person, but it seems as though it will give me so much more time! Maybe I'll actually get to scrapbook this year or create something I've seen on Pinterest!

Another resolution is to lose weight! Maybe this will be my year! Shane's even fixed up my old bike and bought him one so hopefully we can ride together! Should be interesting considering I havent rode in a while um or maybe 10 years! But it'll be a good couple thing for us to do together! Along with more golfing and shooting our guns at the gun range...one might say we have too many hobbies, but maybe this will be our year to get to do most of them! Also, The Biggest Loser def inspired me to get my butt back into shape and I'm so excited for the premiere tomorrow night! And thanks to my MIL for getting me the two Biggest Loser cookbooks I had on my wish list! So glad that Shane and I will now be able to eat dinner together since I am working 9-5!

Well this blog has been random, but I'm hoping now my blogging will happen a lot more often! I've got a lot of hopes on my to-do list! LoL!

Well it's off to Bed to read The Help! Any of my blogger friends reading that? The movie was awesome!! Night y'all!
